Taberna Las Dolores, Plaza de Jesús 4, T 91 429 22 43. Metro Antón Martín. Open until 0100. Beautiful, century-old tiled tapas bar – one of the most típico in the city, and always jam-packed.

El Barandal, C Independencia 2, T 91 541 11 33. Metro Opera. 1700-0130. Closed Mon and Aug. Tasty tapas (in minuscule portions) are served at this delightful, ochre-painted bar overlooked by a small wrought-iron gallery (or verandah) which gives the place its name. Dining area at the back.

El Púlpito, Plaza Mayor 10. Metro Sol. 0930-0100. Tiny, brightly-lit bar tucked away in the corner of the square which serves all kinds of tapas; try the grilled prawns.

La T de San Miguel, Plaza del Conde de Miranda 4, T 91 559 98 19. Metro Opera or Sol. A newish basement tapas bar and restaurant which combines old brick and shiny chrome by the Mercado San Miguel. Also good for a reasonably priced dinner.

Taberna del Cruzado, C Amnistía 8, T 91 548 0131. Metro Opera. 1300-1600, 2000-2400, until 0030 Fri and Sat, closed Tue evening. This has a beautiful carved wooden bar, dark red and cream walls, and charming staff. Among the unusual tapas are fried oyster mushrooms served with aïoli, a creamy garlic dip.

Taberna Miranda, Plaza Donde Miranda 4, T 91 541 37 00. Metro Opera. Tue-Fri 0900-1630 and 2000-2400, Sat and Sun 2000-2400. Spacious, low-lit wooden bar and restaurant with rustic decor serving a good range of tapas; the range of wines is exceptionally good.

Taberna 4 Robles, Plaza de Celenque 1, T 91 522 76 86. Metro Opera or Sol. Bright and breezy tiled Andaluz- style tapas bar – good range of tapas, including tasty pescaditos fritos, fried fish.

Taberna Almendro, C Almendro 13, T 91 365 42 52. Metro La Latina. 1300-1600 and 1900-2400. Old-fashioned, friendly spot with ochre walls hung with wooden racks full of sherry glasses and oak barrels for tables; house specialities include roscas (a round, well stuffed sandwich) and, more surprisingly, egg, bacon and chips (a great hangover cure). Excellent olives, too.

Taberna Bilbao, Plaza de la Paja (Costanilla de San Andrés), T 91 365 6125. Metro La Latina. Tue-Sun 1300-1600, 2030-2400. Large, sleek bar with brick walls, chrome furnishings and a deep orange ceiling. Friendly staff in crisp uniforms serve fresh Basque goodies like callos a la Vizcaína (Basque-style tripe), as well as croquetas, cured meats and salads. There are more than 100 wines to choose from – try the young, crisp Basque wine Txacoli.
