€€€ Victor, Plaza Nueva 2, T 944-151678. A quality upstairs restaurant with an elegant but relaxed atmosphere. This is a top place to try Bilbao’s signature dish, bacalao al pil-pil, or the restaurant’s variation on it, and there’s an excellent wine selection. Conforms to the general Iberian rule of decreasing vegetables with increasing price.

€€€ Victor Montes, Plaza Nueva 8, T 944-155603. Very popular pintxo bar with a small restaurant. If you can shoulder your way to the bar in the evening, you’ll find that not a square inch is free of posh bites. Equally impressive is the collection of whiskies behind the bar.

€€ Aji Colorado, C Barrencalle 5, T 944-152209. A small and friendly Peruvian restaurant in the heart of the Casco Viejo. Discover the taste of ceviche, delicious seafood ‘cooked’ by being marinated in lemon or lime juice – flavour and then some.

€€ Berton, C Jardines 11, T 944-167035. The hanging jamones and bunches of grapes define this cheerful bar, which has top-notch hammy pintxos and raciones and some quality wines by the glass. Packed at weekends.

€€ Kasko, C Santa María, T 944-160311. With funky decor inspired by the fish and high-class new Basque food, this is one of Casco Viejo’s best restaurants, and has a very reasonable evening menú for €16.60, sometimes accompanied by a pianist.

€€ La Deliciosa, C Jardines 1, T 944-163590. Modern decor and contemporary Basque cuisine in a new restaurant whose bright interior contrasts with the dark Casco Viejo alleys. The set dinner at €16 is good value. One of the few in the Casco to be open for Sunday and Monday dinner.

€€ Xukela, C Perro 2, T 944-159772. A very social bar on a very social street. Attractive pintxos, some good sit-down food, and a clientele upending glasses of Rioja at a competitive pace until comparatively late.

€ Bar Irintzi, C Santa María 8. are an art form in this excellent bar; there´s a superb array of imaginative snacks, carefully labelled, freshly made and compassionately priced.
