€€€ Nuovo Notai, via de Pignattari 1, T 051-228694. Closed Sun. A must for all lovers of mushrooms and truffles which form the base for the stuffings, sauces and aromas of many of the creative Umbrian-Tuscan dishes. The green asparagus tart is also delicious, as is the pudding, castagne alla fiamma (flaming cheshuts). This is an elegant if slightly pricier restaurant than most in a very central location.

€€€ Pappagallo, piazza Mercanzia 3, T 051-231200. Closed Sun. One of the city's most famous restaurants. In the heart of medieval Bologna set in the walls of an old 14th- century palazzo right underneath the two towers, this historic and elegant restaurant, in a single high-ceilinged, echoing hall, has an accordingly formal and refined atmosphere (although this is rather detracted from by the sycophantic display of self-reverential photographs at eye level). The menu offers a variety of Mediterranean dishes as well as the Bolognese classics and a fine selection of local wines and after-dinner liqeurs.

€€€ Rodrigo, via della Zecca 2, T 051-220445. Closed Sun. Located in the building that was formerly the National Mint, Rodrigo has been a restaurant for 50 years, serving international and local dishes in a refined environment of wall-to-wall wine bottles (the wine list is accordingly varied and extensive) and chandeliers. Popular for after-show and late-night diners, it is particularly renowned for its white truffles, porcini and agaric mushrooms between September and December.

€€€ Torre de' Galluzzi 5, corte Galluzzi 5 T 051-267638. Closed Sun, at time of writing closed for refurbishment. Located in one of Bologna's medieval towers this restaurant offers Southern cuisine from Puglia, the heel of Italy, and therefore has a bent towards fish and seafood, as well as the signature orecchiette (pasta in the shape of little ears).

€€ Da Gianni – A la Vecia Bulagna, via Clavature 18, T 051-229434. Closed Mon and also Sun evenings in summer. Small and rustic, this is another of Bologna's institutions that has remained unchanged since the 1950s. Fresh hand-made pasta, excellent bollito misto, polpettone and fritto misto, to be washed down with a fine locally produced San Giovese or Albana. When in season try the chesnut tortelloni.

Bistrot Tamburini, via Caprarie 1, T 051-234726, http://www.tamb urini.com Closed Tue, Thu pm and Sun. Sat pm in summer. Set in the back of this the most mouth-watering of Bologna's fresh food shops is a simple self-service canteen where daily until 1700 you can sample on site your own tailor-made selection of the hanging garden of delicacies spread out around the shop and wash them down with a picher of draught wine. It is usually packed at lunchtime so if you can bear to wait a little you will be able to eat in peace. Deliveries can be arranged to any address within Italy. Parties can also be organized here.

€€€ Ghiotto, via San Vitale, 9/B, T 051-26 68 51. Closed Sun except holidays. Open late. Traditional Bolognese restaurant set in a cellar-like stone cavern complete with fireplace. The rustic atmosphere is rendered more formal by the service and Renaiss- ance details in the decor. Offers regional and broader Italian and even Spanish dishes owing to the Sicilian origins of chef and owner.

€€€ Franco Rossi, via Goito 3, T 051-238818. Closed Sun except during trade fairs. More of an exclusive drawing room this small and welcoming restaurant is a delight, both for its quiet and intimate atmosphere and for its slightly lighter and more modern take on heavy Bolognese traditions. Franco will serve and advise you while his brother Lino works magic behind the scenes.

€€ Benso, vicolo San Giobbe 3, T 051-223904. Closed Sun. Tucked down an intriguing little passage on the edge of the old Jewish ghetto this is a fun restaurant. A series of interlinked sexily-lit little rooms are always full and popular with footballers and fans of Bologna FC (as you can tell by the decor and strange murals) especially the day after a match. It is a famous restaurant founded in 1903 and now owned by Beppe and Piero who stick to Bolognese traditional cuisine for the main courses while their southern roots come through in unmissable desserts like gelato ripieno all frutta and cassata siciliana. There is an interior garden for eating outside in summer.
