Beluga Bar, 30a Chambers St, T 624 4545. Daily till 0100. Vast basement drinking den housed in the former dental school and now regularly rammed with the city's toothsome twenty-somethings. Stylish décor and furnishings but not painfully hip (or not as much as it likes to think). The clientele are more interested in getting trousered than admiring each others' gear. Food in the ground floor bistro is fairly predictable and a tad pricey. DJs at weekends and live jazz on Sunday. Bar Kohl, 54 George IV Bridge, T 225 6936. Mon-Sat till 0100. Recently extended and very busy bar which trades on the divergent themes of flavoured vodka and gangsta rap. The bar has over 50 different flavoured vodkas and a mixed clientele of clubbers, drinkers and Ali-G types (due to the constant hip-hop played on the stereo). The Bow Bar, 80 West Bow, Victoria St, T 226 7667. Mon-Sat till 2330, Sun till 2300. No-nonsense, no frills pub for real ale enthusiasts and those who long for the days before mobile phones and sun-dried tomatoes. A dependable pint in an ever-changing world. The Beehive Inn, 18-20 Grassmarket, T 225 7171. Sun-Tue till 2400, Wed-Sat till 0100. Typically rowdy Grassmarket pub downstairs, but the restaurant upstairs is surprisingly intimate and serves good Scottish fare. Starting point for Literary Edinburgh tours. City Café, 19 Blair St, T 220 0125. Daily till 0100. The daddy of Edinburgh's style bars and still the busiest and most vibrant pre-club venue in town. Done out like an American diner with chrome-topped bar and booth seating. Humungous platefuls of food served all day (chilli, burgers, etc) and a couple of pool tables. Set on two floors with a large bar area with pool tables to the rear on the top (ground) floor and smaller bar downstairs where funky House/Garage DJs play at weekends. EH1, 197 High St, T 220 5277. Daily 0930-0100. Slap bang in the heart of it all and close to the main clubs around the Cowgate/Royal Mile area. Outside seating, so great for people-watching, plus comfortable and stylish interior. Relaxed atmosphere is conducive to a lazy late breakfast. Small area at the back where DJs play on weekends for a distinctly up-for-it crowd of pre-clubbers. Iguana, 41 Lothian St, T 220 4288. Daily till 0100. This fashionable café-bar/bistro attracts students by day and pre-club ravers by night. Smart décor and DJs Friday/Saturday night. Large video screens. Very buzzy but it can be too noisy to maintain any form of conversation. Negociants, 45-47 Lothian St, T 225 6313. Daily till 0300. Great for a relaxing lunch-time beer or coffee, and pop- ular with students and professionals alike. At night it's a fave late- night watering hole, with DJs and dancing downstairs, and a life- saver for those poor souls suffering the midnight munchies. The menu is international in flavour, excellent value and available till way past your bedtime. Good place for a relaxing Sunday brunch to work off that hangover, and lots of outside seating in summer. Oxygen Bar & Grill, 2-5 Infirmary St, T 557 9997. Daily till 0100. A supremely cool and stylish place to eat or drink. Nice place to chill out with a beer or a coffee and fairly buzzes at weekends.
