One of the city's great culinary experiences, though not cheap, and so good even the most fanatical carnivore might be tempted to give up meat. From the owners of the famous Arran restaurant and smokehouse, the capital version serves the same wonderfully fresh seafood, with outdoor seating in the summer. Mon-Sat 1200-1500, 1800-2300, Sun 1200-1500, 1900-2300. Basement restaurant thats as notable for its cool design as for its top-notch modern Scottish cuisine. Menu features some old favourites as well as more unusual Caledonian culinary incarnat- ions, and more than just a token veggie selection. Opposite Waverley Station, this upstairs bistro is an Edinburgh institution. It can get very busy, which isn't surprising given the mouth-watering Scottish menu and attention to detail. The set menus are excellent value. Wine bar next door is heaving after working hours. ££ Dubh Prais, 123b High St, T 557 5732. Tue-Sat 1200-1400, 1830-2230. Pronounced "doo prash", this tiny basement restaurant in the heart of the Royal Mile offers the best of traditional Scottish cooking, as well as more contemporary innovations. Dinner is à la carte, but you can enjoy a two-course set lunch for a tenner. Chef/owner James McWilliams enjoys a huge and loyal local following, which says it all. ££ Gordon's Trattoria, 231 High St, T 225 7992. Sun-Thu 1200-2400; Fri and Sat till 0300. Great-value Italian food served with typical gusto at almost any time of the day or night, which is why it's so popular, and therefore cramped at lunchtimes and in the evenings. Great for people-watching in summer when tables spill out on to the street. ££ Le Sept, 7 Old Fishmarket Close, T 225 5428. Mon-Thu 1200-1345, 1800-2200, Fri 1200-2300, Sat 1200-2230, Sun 1200-2130. Down a steep, cobbled close off the High Street below St Giles. This lively little restaurant is famed for its superb crêpes, but also has a three-course set menu offering good French bistro-type food. ££ Légume, 11 South College St, T 667 1597. Mon-Sat 1200-1400, 1730-2130. Well-positioned just off the Bridges, this vegetarian newcomer serves up a limited but well-executed menu with a distinct French influence. Service is excellent so it's good for a fast lunchtime repast. ££ Maison Bleue, 36-38 Victoria St, T 226 1900. Daily 1200-1500, 1700-late. No chance of missing this bright, blue three-storey building. Inside theres a lively, Mediterranean feel reflected in the imaginative, anything-goes approach to eating. Choose from Les Bouchées (mouthfuls), Les Bouchées Doubles and Les Brochettes which feature a wide range of French-influenced flavours, from North African to Oriental. Their BYOB policy (Sunday-Thursday), set lunch and pre-theatre menus make it even more of an appealing proposition.
