*** Charolés, C Floridablanca 24, T 91 890 59 75. This is El Escorial's most celebrated restaurant; the Wednesday cocido has become an institution. Terrace in summer.

** Fonda Genara, Plaza San Lorenzo, T 91 890 43 57. Tucked away between two squares, this traditional restaurant serves homecooked dishes and is decorated with old photographs of the town.

* La Cueva, C San Antón 4, T 91 890 15 16. Another popular spot, La Cueva is a delightfully rickety old inn set over three floors which offers tapas in the bar or tasty local dishes in the dining area.

*** Mesón de José María, C Cronista Lecea 11, T 92 146 60 17. Cándido's former pupil José María has been making a big name for himself at his own méson, rated as one of Segovia’s best restaurants. It’s a great place to try the local speciality of cochinillo and there's a lively bar area for tapas if you don't want a big meal.

** Mesón de Cándido, Plaza Azoguejo 5, T 92 142 81 03. The late Señor Cándido was a legend, and his restaurant, picturesquely huddled under the aqueduct arches, is papered with photos of famous clients. Now run by his son, its reputation has palled slightly, but it's still a memorable spot for lunch.

* Cuevas de San Esteban, C Valdeláguila 15, T 92 146 09 82. This cavernous bar-restaurant just off the Plaza San Esteban is a big favorite with locals. Good tapas and simple meals.

*** Asador Adolfo, C La Granada 6, T 92 533 73 21. Classic Toledano restaurant serving excellent regional dishes accompanied by an equally fine wine list.

* La Abadía, C Nuñez de Arce 3, T 92 525 11 40. This restaurant-bar is enormously popular with locals who spill out on the street with their drinks. Excellent tapas and a good value menú del día.

* Casa Ludeña, Plaza de la Magdalena 13, T 92 522 33 84. A very friendly, old-fashioned restaurant serving Toledano classics like partridge or cuchifritos (lamb cooked in sauce of tomatoes, egg, wine and saffron). Good value menú del día.
