Spain does festivals like no other country in Europe. There is something about the Spanish attachment to popular traditions and the irrepressible exuberance of the locals which makes all festivals an unforgettable experience. And Valenciano festivals are more explosive literally than most, because almost all festivals include fire, fireworks and lots of big bangs (which even have a special name la macletà).
Whether you manage to make it for the huge, famous festival of Las Fallas, or just catch a local knees-up in a tiny village, it's likely to be the high point of your stay.
The tourist office has a free brochure listing all the major festivals in Valencia itself, and will also help you find out about local village festivals throughout the Comunitat/Comunidad de Valencia region. These usually (but not always) take place in the summer months.
