This is a new, fashionable restaurant with slick, minimalist decor and a menu featuring contemporary Valenciano cuisine based on fresh, local ingredients. A super-hip, sleek restaurant serving unusual dishes with a Middle and Far Eastern flavour: try the prawns with satay sauce or duck with five spices and peaches. A sleek, unusual restaurant with crisp, dark blue and white decor that serves organic, macrobiotic and vegetarian Mediterranean dishes with an Oriental twist. Mon 2000-2345, Tue-Sat 0930-1600, 2000-2345. A well-known, traditional restaurant in the heart of the Old City which serves up classic, local dishes. The dining room is fitted with traditional wooden furniture and it's clear the emphasis is on the food and not the decor. There's also a brightly lit tapas bar where you'll find all kinds of unusual shellfish, along with all the popular favourites. The quality and freshness of the food merit the relatively high prices, and the waiter will be delighted to give you recommendations (although they despair of foreigners ordering standards like ham and calamari). Mon-Sat 1200-1600, 2000-0100. This simple, relaxed restaurant and tapas bar is a charmer. Tucked down a back street behind the cathedral, it specializes in seafood that is unfailingly fresh and tasty. The revueltos (scrambled egg dishes) are also good, particularly the one with wild mushrooms and asparagus. The friendly staff will happily give recommendations on a good, local wine to accompany your food, and there's a huge window to watch the world go by. There's also a small terrace in summer. This is a great choice in the Carmen neighbourhood with stylish and cosy, red-painted dining areas and a small pavement terrace outside. It manages to be effortlessly hip and it is clear that although the surroundings are welcoming, the emphasis here is on the food. It serves Mediterranean specialities handled with an innovative touch, which are all absolutely delicious. It usually has a vegetarian choice and also offers great desserts. There's a fine wine list and the friendly staff are more than happy to give you recommendations. Tucked down a tiny passage near the cathedral, La Lola is definitely one for the so-cool-it-hurts-crowd. Painted a startling red with huge white dots, the spectacular interior is eye-poppingly stylish. The food, a fashionable Basque-fusion mix, is imaginative and very tasty, and is accompanied by an equally good wine list. Diners are entitled to a 50 per cent discount for the DJ sessions which begin after midnight on weekends. Reservations essential. EE San Nicolás, Plaça Forn de Sant Nicolau/Plaza Horno de San Nicolás 8, T 963 915 984. Bus 7, 81. Tue-Sat 1330-1530 and 2100-2300. Tucked away in a quiet square by the beautiful Església de Sant Nicolau, this rustically decorated, traditional restaurant is a great place to try local seafood. If you are feeling adventurous, try the canelones de anguila (cannelloni stuffed with baby eels), a local favourite, but there are also plenty of less exotic and equally tasty dishes. It's a good place to try paella too, and there are good home-made desserts and a wine list featuring regional wines. E Bar Pilar, C/Moro Zeit 13, T 963 910 497. Bus 7, 62. 1200-2400. A timeless, old bar just off the Plaça del Tossal, where the thing to do is order up a portion of mussels (clòtxines in Valenciano, mejillones in Castellano) and toss the shells in the orange buckets ranked underneath the bar. (It's not called 'the Temple of Mussels' for nothing.) There's a good range of other tapas too. It's always packed and noisy, but there are a few tables; if you want one, be sure to get your name on the waiter's list.
