This is one of the most talked- about restaurants in the city, where you can tuck into classic, regional recipes that have been given a creative new twist by rising young chef Raul Alexandre. This is the newest project of Bernd Knoller, one of the most celebrated chefs in Valencia. A sleekly designed modern restaurant, it serves excellent, contemporary Valenciano cuisine, prepared with the freshest local produce and accompanied by a lengthy and well-regarded wine list. Pictures of famous bullfighters set the scene in this traditional stalwart on the Valenciano restaurant scene, one of the best-loved arrocerías in the city. All kinds of rice dishes (arroces) are on offer, and it's a great place to try an authentic paella. The speciality is paella with rabbit and chicken, but there are several varieties to choose from. If you are beginning to tire of rice and seafood or want something different for vegetarians, this delightful and romantic little restaurant specializes in fondues made with meat or cheese. This elegant establishment is one of the best vegetarian restaurants in Valencia, serving a delicious array of mainly organic vegetarian and vegan dishes. Among the house specialities are tofu with wild mushrooms, and an unusual rice dish flavoured with seaweed. There is also a range of freshly squeezed fruit juices and a selection of organic wines.
