This is a big favourite for important family celebrations with a huge summer terrace and excellent paellas and seafood. Wicker furniture, whitewashed walls, and a profusion of plants give it a cool, relaxed ambience.

EEE Oligarum, C/Las Barques 9, Xàbia/Jávea, T 966 461 714. Closed Wed and Thu night. Dinner only during Jul and Aug. This is a smart and romantic seafood restaurant, set in a beautifully converted fisherman's house on the beach with a terrace. Exquisite local specialities, a fine wine list and good service.

EEE Tiffany’s, Av del Mediterráneo 51, Benidorm, T 965 854 468. 2000-2300. Closed early Jan-early Feb. Tiffany's remains the swankiest place to eat in Benidorm. The cuisine is French at its most classic – lobster thermidor, châteaubriand with béarnaise sauce – and the wine list numbers more than 60 excellent wines in all price categories.

EEE Nou Manoulin, C/Villegas 3, Alacant/Alicante, T 965 200 368. 1300-1530, 2000-2300. An enormously popular, brick-lined restaurant with classic regional dishes and a good value menú del día at around E 12. It's a great place to try a genuine paella or one of its other excellent rice dishes. If you don't want to go the whole hog, there's an excellent, permanently crowded, tapas bar which serves huge portions.

EE La Cambra, C/Delfín s/n, Calp/Calpe, T 966 830 605. Mon-Sat 1300-1500, 2000-2400. This is a romantic spot, scattered with sculpture and art, and serving refined Mediterranean and Basque cuisine with the emphasis on ultra-fresh seafood. There's a fine wine list and excellent service.

EE La Capella, C/Sant Pau/San Pablo 1, Altea, T 966 680 484. Closed Wed (lunchtime only in summer). This is a romantic spot on the Plaça de la Església/Plaza de la Iglesia, right at the top of Altea, where you can dine under stone arches and grape vines on the terrace. The restaurant serves fine traditional fare, using the best local produce, and there's also a great tapas bar attached.

EE Los Zapatos, C/Santa María 7, Calp/Calpe, T 965 831 507. Thu-Tue 1330-1600, 2000-2300. For something different, try this welcoming restaurant which serves imaginative North African dishes, accompanied by an excellent wine list.

EE L'Ullal, C/Benicanena 12, Gandia-Platja/Gandía-Playa, T 962 877 382. Mon-Sat 1330-1700, 2045-2330. Closed second fortnight of Jan, first week of Jun. One of the best and most celebrated restaurants in the area, serving delicious and highly inventive Mediterranean cuisine based on the freshest seasonal produce. The seafood is always excellent, but it also offers wonderful salads if you want something lighter. The home-made fresh fig tart is heavenly.

EE Piripi, C/Oscar Esplá 30, Alacant/Alicante, T 965 227 940. 1300-1530, 2000-2300. Dine on traditional Levante cuisine prepared with the freshest local ingredients, or just sit at the bar for a fabulous range of tapas and wines. Piripi is generally considered to serve some of the finest paella in the whole province (although paella is taken very seriously and everyone will have their own favourite). The lunchtime menú del día is a great bargain.
